Marlin

 

Good numbers of striped marlin, some blues and still some sailfish, from the  1150 to the 95, off the light house on lures live bait and ballyhoo.

 

 

Dorado

 

 

Slowed down the last few days, the weather is getting very hot, makes  the water temps just a little to hot for the dorado.

 

 

Tuna.

 

 

Tuna has been good at gray rock and santa maria, catching on sardines from 5lb to 15lbs, lots of white bonita, they are very good eating.

 

 

Wahoo

Still around gray rock and up at rancho magrino, catching on jet heads, lures being slowed trolled and live bait, some nice size from 40 to 50lbs.

 

 

Inshore

Still a few roosters on the beach with live bait, repalas and a few skipjacks.

Lemon Butter Fish

  • 4 firm white fish filletsabout 6 inches long, 1-inch thickness throughout (cod, halibut, or mahi mahi are great )
  • 3 TB melted butter
  • Juice and zest from 1 medium lemon
  • ½ tsp kosher saltdivided, plus extra to taste
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp freshly ground black pepper
  • 3 TB olive oil
  • freshly chopped basil or parsley leavesfor garnish and flavor
  • extra lemon slices for serving

 

  • Use paper towels to thoroughly pat-dry excess moisture from fish fillets. This step is crucial for fish to brown nicely in pan – otherwise, it will steam instead of brown. Set aside.
  • In a bowl, combine melted butter, lemon juice and zest, and 1/4 tsp kosher salt. Stir to combine well. Taste and add a bit more kosher salt, if desired.
  • In a separate bowl, combine remaining 1/4 tsp kosher salt, paprika, garlic powder, onion powder, and black pepper. Evenly press spice mixture onto all sides of fish fillets.
  • In a large, heavy pan over medium high heat, heat up the olive oil until hot. Once your oil is sizzling, cook 2 fish fillets at a time to avoid overcrowding; this allows for even browning.
  • Cook each side just until fish becomes opaque, feels somewhat firm in the center, and is browned, about 2-3 minutes per side; lightly drizzle some of the lemon butter sauce as you cook, reserving the rest for serving. Take care not to over-cook, as that will result in a tougher texture. Season with extra kosher salt and freshly ground black pepper to taste.
  • If desired, season with extra kosher salt and freshly ground black pepper to taste.

    Serve fish with with remaining lemon butter sauce, basil or parsley, and lemon wedges.

 

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs. You don’t want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
